I love these easy home-made pickles and always have some on hand stashed away in my fridge. Takes your hum-drum lunchtime sandwiches into a whole other level. Great accompaniment to hamburgers too. Enjoy! -Amy
What You'll need:
2kg red onions, peeled and sliced into rings
Brine Solution
- 3 cups white vinegar
- 1 ½ cups white vinegar
- A few cloves, allspice berried and peppercorns
- 2 bay leaves
- A small dried chilli
Method
1. Simmer onion rings in 3 separate batches for 20 seconds in the brine
2. Remove onions to baking sheet using a slotted spoon and let cool.
3. Repeat twice more.
4. Chill the leftover brine thoroughly.
5. Keep your pickled red onions in the brine in the refrigerator.
